
Garlic Mushroom Udon

Let’s make it
Loosen the noodles
Place the udon in a bowl and cover with hot water to loosen, following the packet instructions. Drain well. Mix soy sauce and mirin in a cup.
Give mushrooms some room
Heat neutral oil in a large pan over medium-high heat. Cook the mushrooms for 8 minutes, stirring occasionally, until golden.
Make it glossy
Add garlic and cook for 1 minute. Add drained noodles, sauce and 2 tablespoons of water. Toss gently for 6 minutes until hot and glossy.
Finish the bowl
Turn off the heat and add sesame oil and spring onions. Divide between two bowls and enjoy while hot.
Storage: Refrigerate for up to 2 days. Reheat thoroughly in a pan with a splash of water.
